]]>WHAT’S A BIG FOOTBALL DAY FOODIE HIT? SLOPPY JOES! (Check out Healthy Homemade HONEY-GINGER BBQ SAUCE at end of article!)
Soon, I’ll be happily cooking away, creating yummies to my heart’s desire within my new wonderful surroundings on my new appliances. YAY! I will be fixin’ up some healthful eats and treats with natural, organic ingredients I love! With my guest blogger’s recipes or other I find and love, I can always find ways to prepare them in more healthful ways to my liking.
For now, I am once again showcasing my invited guest, foodie extraordinaire, Jean Broom!
I’m including here, two of Jean’s yummy homemade versions. Use the Honey Ginger BBQ Sauce for a Vegetarian version (my fave style) and you have three options! Toast up a ton of the crusty bread and have three versions available and all your giddy fans with be in Football-heaven.

This recipe would be great for the ever-popular Football time- sweet Barbecue Chicken Wings! (Deba Do)
In a medium pot, on medium heat saute: 1 tbps. vegetable oil Cook, stirring occasionally, until onions are clear, about 3-4 minutes. Then add the following: 3 tbsp. apple cider vinegar Bring all ingredients to a boil and turn down to medium low and cook, stirring occasionally, for about 20 minutes. If you prefer a smooth sauce, you could blend this in a blender or with a hand blender. I like it chunky. It can then be stored in the fridge for up to a month. I like to mix it with poached chicken, which has been shredded. I can find numerous uses for the chicken one of which is to put it on pizzas, along with peppers, onions and mushrooms. or on a heated bun with a bit of shredded cabbage, hint of onion and a dab of mayonnaise for a great family friendly dinner, or for a game day…like the Super Bowl or simply brush it on baking chicken pieces the last few minutes of cooking time. *Shoa Xing is a Chinese cooking wine that I like to use in sauces and stir fries. If you would rather use something that’s alcohol free, there is a product called *Fre that’s an alcohol free wine that comes in both red and white. Or alternatively you could use an unsweetened red grape juice. To poach chicken: Put either boneless skinless or bone-in chicken breasts or thighs into a pot with enough water to just barely cover the chicken. Bring to a boil, cover and turn down to medium low and cook till the meat is cooked through and there is no more pink in the middle, about 15-20 minutes, a little longer if using bone-in. An onion, a piece of celery and half a carrot could be added to the water before bringing to a boil, to give more flavor to the meat and broth. Let the chicken cool slightly and shred chicken with your hands or pulling apart with two forks. Add desired amount of barbecue sauce to the meat. Strain the chunks from the broth and save for a future use. ( I like to put mine in a freezer bag for when I make soup ). |
In a heavy bottom medium pot, on medium heat, brown: 2 lbs.ground beef (*or chicken or turkey, or meat substitute! – Deba do) When browned, drain any excess fat and add: 1 medium onion, chopped Saute till softened, 2-3 minutes and add the following: 1 10 3/4 oz. can tomato soup Cover and cook over medium-low heat while you prepare the rolls, cheese and cabbage. Cut open 12 hamburger like rolls. Lay them on a cookie sheet and preheat oven to broil. Grate: 1 c. sharp cheddar cheese On a mandolin or with a sharp knife, thinly slice enough cabbage to use on top of sloppy joes. For me, this depends on who at my table will want the cabbage. Scoop a spoonful of mayonaise into bowl with cabbage ( or directly onto cabbage on cutting board ) with a squeeze of lemon juice and a sprinkling of salt and pepper. Mix with your hands and set aside. Put rolls under the broiler until just lightly golden. Remove from oven and scoop meat on one-half of a roll, cover with cheese and put the pan back into the oven until the cheese is melted. Put as much cabbage on top of melted cheese as you wish and serve. You could add other toppings such as mayonaise, sliced tomato, shredded lettuce, pickled jalapenos, pickles and whatever else you’d like. Makes 12 sandwiches Note: I’m not a huge believer in prepackaged and processed foods, but in this instance, I make an exception. The kids love this dish and adding the cabbage slaw makes me feel better because I’m getting some vegetables into the dinner. You could use an already shredded bagged cabbage in place of slicing your own. This is such an easy and quick dish to throw together on a busy Holiday evening. Just keep some rolls frozen for such an occasion. They will thaw enough to broil in the time you brown the meat. Turkey would also work well instead of the beef. |

]]>You haven’t tasted shortbread until you have tasted my guest, Jean’s, “Jeweled Shortbread”! Perfect for Holiday Parties or Gifts!
Having not had a kitchen after my flood for several years now, I am SO looking forward to getting back into my new one to whip up tasty, healthful meals and treats, when the remodel is completed. It’s almost there!
In the meantime, I have some wonderful Guest Bloggers to share fabulous dishes, beginning with Jean, Cuisine Artist~ Extraordinaire!

Jeweled Shortbread
Grease an 8”x 8” square baking pan (preferably not glass ) with butter and line with parchment paper leaving an inch or so of extra overhang to help lift out the paper later. The butter will help the paper to stick to the pan. Set aside.
In a medium sized bowl combine:
1 ¾ c. plus 2 tbsp. Unbleached flour
½ c. Plus 2 tbsp. Cornstarch
¼ tsp. Baking soda
Stir with a whisk and set aside.
Grease an 8”x 8” square baking pan ( preferably not glass ) with butter and line with parchment paper cutting a slit toward the center of each corner as shown in photo, to help ease it into the pan. Set aside.
In a large mixing bowl beat with electric beaters:
1 ⅓ c. Softened butter
1 ¼ c. Powdered sugar
Pour dry ingredients into wet and beat just until combined. Stir in the following ingredients:
½ c. Pecans, finely chopped
½ c. Dates, pits removed, chopped finely
¼ c. Fruit cake mix ( candied fruit )*
Spoon the batter into the parchment lined baking pan and smooth with a large spoon that has been dipped into very hot water. Chill the cookies in the fridge until firm, at least one hour.
Turn out onto a cutting board lined with wax paper. Cut with a long deep knife into one inch wide strips. Then cutting the other way, cut into two inch lengths. Preheat oven to 325 degrees. Lay the cookies on their sides on a parchment lined cookie sheet and bake for 30 minutes. Cool slightly on pan and then remove to a cooling rack until completely cool. Store in an airtight container until ready to use. They will also freeze well.
Note: If you are not familiar with shortbread, you’re in for a treat. Don’t be afraid of the amount of butter in this recipe. this will make almost four dozen cookies. Making them in this 8×8″ pan is deceptive. I am not a huge fan of candied fruit because of the dyes and the preservatives, but this is a minimal amount and gives a beautiful color and texture. If you prefer not to use it, just replace it with some finely chopped dried fruit. Some dried cherries or cranberries would be good. Just make sure you cut them up to keep them small. Also, if you’re not a date fan, replace them with currants or chopped figs Filberts would be delicious instead of the pecans. I would toast them first and then chop them. Shortbread is a little more tender than most cookies, and contain much more fat, so if you see some fat seeping out from them during baking, don’t worry about that. It will come out fine in the end. They’re rich, buttery and delicious.

]]>My son loves to cook. He’s been wanting a better mixer for awhile, so his cute wife to oblige. He was oh so pleased! (As you can tell by the cheesy smile.)
The kids thought the delivery box was fun! Played in it for quite awhile.
Thought I’d share about this with you after the mixer has been time tested. Like with this yummy homemade pizza!
He’s made good use of it making all sorts of things including multiple favorite cookie recipes. They use as natural ingredients as they can. I’ll post recipe for these snicker doodles soon!
All in all, the family has really enjoyed their mixer! Rem says it works like a dream and makes fixing his faves even more fun! It’s also a very reasonable price for how well and all it can do.
